I notice that the most viewed post is "Le Crespelle" so I thought I would give everyone the recipe. Now, I confess, I am not a cook, I am very lucky to have a husband who loves to cook and is a great cook too. I always have trouble here in Italy when I ask another person for a recipe, nobody measures anything. They all say, a little bit of this or some of that, for me, that is a sign of a true cook, however I need to measure everything. I asked my friend who lives across the street, and she gave me this recipe, I think it is enough to feed an army so you might want to cut the recipe in half.

Le Crespelle

1.400 grams of flour (3lbs or 49 ounces)
1 kg of boiled and mashed potatoes (2.2lbs or 35.2 ounces)
2 eggs
1 cube of yeast (disolve in warm water, the 250 grs needed for the recipe)
1 pinch of salt
250 grams of water
250 grams of milk

After you mix the ingredients together, you should nead the dough a little bit, like when you are  making bread, set it aside to let it rise. After it has risen, you can deep fry them. The dough is some what sticky, so put some cooking oil on your hands so you can manage the dough and it wont stick to your hands. Once the oil is hot, get a small portion of dough and drop it into the frying pan, then get another piece of dough and drop it in the oil and continue in this manner.These babies are deep fried so they should be floating in the oil while cooking.  When they turn golden, they are done, you can sprinkle  sugar or powdered sugar  over them,  either one is just great.
