Here we are again with our monthly topic, this month’s topic is “What are your favorite recipes?” Well, I believe I have mentioned this before I am not a great cook, I prefer the fire of my torch not the stove. I also tend to burn things a lot, I will start cooking something and then head down to my studio and completely forget about what is on the stove. Ooops! The creativity makes me forget everything else that is going on. Therefore I have chosen a simple traditional Italian desert, which has very little cooking involved. “Tiramisu” In English it means “pick me up”, this baby has so many calories that it is definitely a picker upper. I call this “comfort food”
In the photo below are all the ingredients you will need. My mokas have seen better days, the handle on the small one I burnt off, forgot it on the stove. The handle on the bigger moka is just a little melted, I remembered just in time. Thanks god my husband loves to cook!!!
- 500 grams mascarpone
- 100 grams sugar
- unsweetened coffee (espresso)
- 3 egg yolks
- whip cream
- unsweetened cocoa
- Lady finger cookies
- Nutella (optional)
Before you start mixing everything together make your coffee and let it cool, I made two large mokas and one small, (the one with no handle) That is about 10 espressos, here in Italy the coffee cups are small. Then whip up your whip cream, and in a separate bowl mix together your mascarpone, egg yolks and sugar. Then mix the two together.
Some people like to line up there lady fingers in the pan and then pour the coffee over them directly from the moka. I think this makes the lady fingers to soggy and I do not like my lady fingers soggy. Therefore I dunk them individually in the coffee very quickly so they don’t absorb too much coffee and then line them up in the pan.
After you made a layer of lady fingers, spread on a layer of your mascarpone mix.
This is the optional part, I like to add nutela, it gives a little something extra. More calories of course. Because the nutela chocolate is dense, you can warm it up in the microwave and drizzle it over your first layer.
Then repeat the layers starting again with the lady fingers ………….
The pan I used was deep so I did 3 layers of lady fingers, two layers is also fine, I just love my deserts!! On the last layer, sprinkle some unsweetened cocoa for a final touch, and refrigerate for a couple of hours. Enjoy!!!
